How to cook Peka’s fruit salad
Peka (also known as many names, such as broken bones, Oroxylum Indicum, Tree of Damokles, or Midnight horror) is one of beneficial plants. It’s said that people use it for treating different diseases. In Thailand, its fruits (commonly called Lin mai, Lin fa, or Paka) are used to cook food. Though there are many ways to cook them, I recommend you to make them as salad. Let’s see how to cook Peka’s fruit salad!!!

Ingredients for spice
15 pieces of dried chili
6 shallots
½ cup of chopped Lemon grass
1 tbsp. of chopped garlic

Ingredients for salad
4 cups of Peka’s fruits
2 cups of ground pork (pan fried)
½ cup of parsley and spring onions
4 mints
2 tbsp. of toasted ground rice
½ cup of sliced shallot
1 tbsp. of fish sauce
1 tbsp. of lime juice  

Equipment
Charcoal fire
Knife and cutting boards
Measuring cups
Mixing bowl
Spoon for mixing
Mortar for ponding


Preparation
Frist, grill the Peka’s fruits on charcoal fire about 10 minutes. Then scrape off the charred outside skin and cut their pulp into 0.5-inch pieces.
Second, dry fry dried chili, shallots, chopped Lemon, and grass chopped garlic. After that, pound them together. So we have spice ready for salad. Set it aside.

Instructions for cooking salad
First, put the spice into a mixing bowl. Then, add lime juice, fish sauce and toasted ground rice and mix them well.
Second, add the pan fried shallot and ground pork. After that, mix them well again.
Third, add pieces of the grilled broken bones plant’ fruits which are prepared already and toss them well.
Next, sprinkle the spring onions and sliced parsley. Then mix them together.

Last step, now the Peka’s fruit salad is ready to be served. Serve it immediately on a large plate or bowl with steaming hot sticky rice. Don’t forget to put mints on the salad before eating. Enjoy it now.
